Summary
This chapter summarizes the extensive research on high‐lysine mutants, other mutants, and mutant combinations that modify endosperm storage proteins as well as other approaches to improvement of protein quality and content in maize. Corn (Zea mays L.), or maize is one of the most important and most remarkable cereal crops in the world today. The USA alone produces 46% of the total world corn production on 23% of the total world land area devoted to corn production. The high starch content of cornmeals and flour is important for producing a high puff in preparation of extruded snack products in which a delicate flavor is desired. Sweet corn is a popular food in the USA which is marketed fresh, frozen, or canned. Popcorn is certainly a favorite in the USA. Enlarging endosperms of developing corn kernels are composed of a population of cells of varying physiological ages.
